Having said all that, I don’t use fish ponds all that much. Once I’ve got plenty of flounder and midnight carp, I’ll empty those and put something else in. I do swap out fish because there’s little need for lots of fish ponds. Of course, if you want to complete ship every item, you need sturgeon for caviar. Stingray produces cinder shards and dragons teeth, helpful if you don’t want to farm the volcano.

Plus gold ore and spicy eel, I always need gold for crystalariums and can never have enough spicy eel. Lava eel will produce magma geode, I find that helpful completing the mineral collection because I really don’t have much desire to farm mine levels 90+. Not that it’s particularly necessary, but that level 15 fishing bar is quite fun. I do flounder and midnight carp so I have plenty of them for seafoam pudding, plus midnight squid for the ink. Don't produce geodes as often as the octopus and it's much easier to collect the items found in them (1 in 26 chance) than the onmi geodes, but if you set up the ponds early it can save you some mining later. Lava eel/Ice Pip: frozen and Magma geodes. Don't forget they can be traded to the desert trader for artifact troves.

You'll need a ton of these late game to finish the museum collection for perfection. Octopus: a reliable supplementary source of omni geodes.

Sturgeon: you need caviar as a separate item from preserved Roe for perfection and the movie theater Rainbow Trout: very slim chance of a Prismatic Shard Squid/midnight squid: you need 3 inks for perfection: one to ship and two for recipies. Instead, use fish ponds to get items you need for perfection or to save yourself some hassle and farming later. If you have extra preserve jars fill them with ancient fruit which is a recurring crop and makes a more valuable product.
